Mitchell Parker, lhp, San Jacinto (Kentucky)
A known prospect during his days as a prep in New Mexico, lefthander Mitchell Parker had originally committed to the University of Tennessee prior to signing with San Jac and came back for a second stint with the Gators after foregoing a 27th round selection by the Rays in 2019. The coaching staff is glad Parker returned to lead the staff as he has been lights out in the early portion of 2020, and while his Friday night start against Laredo may not have matched his prior two starts, it’s still easy to see why there’s some buzz already surrounding the 6-foot-4, 195-pound southpaw.
